Sausage & Beer Cheese Soup

Ingredients
  

  • 12 oz smoked sausage cubed
  • 2 Tbsp butter
  • 1/3 cup onion diced
  • 2 celery stalks diced
  • 1 32 oz chicken broth
  • 4 cups russet potatoes peeled and diced 1 inch
  • 1/2 1 pound block processed cheese block cubed to help melting
  • 1 cup half and half
  • ½ cup beer
  • black pepper

Instructions
 

  • Dice sausage, onions, and celery.
  • Melt butter in a large pot and saute onions, celery, and sausage for 5 minutes over medium-high heat.
  • Add Chicken Broth and Potatoes.
  • Bring to a boil.
  • Reduce heat to medium then cook until potatoes are fork tender
  • Mash Potatoes slightly with a Potato Masher.
  • Add Milk, Cream, Beer, cheese block, and Black Pepper.
  • Continue cooking for about 10 minutes, stirring occasionally, until the Velveeta is completely melted and soup is heated through

Notes

Velveeta can be substituted for Aldi brand cheese product
