Cheesy Fiesta Chicken & Rice

Our family is LOVING this easy chicken dinner. Just throw it in the crockpot and in 4 to 8 hours you will have a delicious cheesy dinner.

What you will need:

  • 1 can fiesta nacho OR cheddar cheese Campbells soup
  • 1 pound chicken breast OR any boneless skinless chicken
  • 1 package Knorr chicken rice
  • 1 cup cheddar cheese

Step One: Spread out 2 spoons full of soup in the bottom of 4 to 6 quart Crock Pot. Place chicken on top.
Spread the rest of the soup on top of chicken

Step Two: Cook on low 8 hours or high 4 hours.

Step Three: Shred chicken in the crock pot mix it up with the soup. Add one cup of cheddar and mix it in.

Step Four: Cook Knorr Rice according to directions on the bag. Mix into the chicken mixture, spread remaining cheese on top, place lid back on. Let cheese melt. Serve Warm!
