Potato and Ham Soup , Easy 30 minute dinner
Cold weather means soup! this soup is creamy and chunky.
you are going to start with chopping and dicing all the things.
- 5 good size potatoes, about 5-6 cups
- enough chicken broth to cover potatoes
- 1/4 cup onion
- 1/4 cup celery
- 1 cup cubed ham
- 2 tbsp corn starch
- 1/2 cup milk or half & half
1.)PEEL AND CUT POTATOES, CELERY, HAM AND ONION
2.)SAUTE CELERY ONION AND HAM FOR 5 MINUTES
3.)ADD IN POTATOES, COVER WITH CHICKEN BROTH AND BOIL UNTIL POTATOES ARE TENDER
4.)SMASH A FEW BIGGER POTATO CHUNKS
6.)MIX CORNSTARCH AND half & half TOGETHER , STIR INTO SOUP, LET IT THICKEN
I like to serve this with cheddar biscuits.
Potato & Ham Soup
Creamy Potato soup with bits of ham
Ingredients
- 6 cups russet potatoes peeled and chopped 1-2 inch
- 1 cup cooked ham diced 1/2 inch
- 1/2 cup celery diced, tiny
- 1/2 cup onion diced, tiny
- 4 cups 2 15oz cans chicken broth enough to cover potato
- 2 tbsp corn starch
- 1/2 cups half & half
- salt & pepper
Instructions
- In a large pot, combine potatoes, ham, celery, onions, and chicken broth. Bring to a low boil and cook over medium heat until potatoes are fork-tender, 10 to 15 minutes.
- smash a few bigger potatoes, so everything isn't so big
- In a cup mix half & half and cornstarch together
- Pour mixture into the soup and stir. let thicken. Add pepper, and salt to taste.
Notes
If mixture is too thick milk or water can be added to thin out 1/4 cup at a time.
